HAL Unveils Mediterranean Bistro Concept at Rudi’s Sel de Mer

Holland America Line is set to enhance the dining experience at Rudi’s Sel de Mer aboard several of its ships, including the ms Rotterdam, ms Nieuw Statendam, and ms Koningsdam. This refresh, launching in January and February 2025, introduces a Mediterranean bistro concept that embraces the relaxed ambience reminiscent of coastal dining.

Under the expertise of Chef Rudi Sodamin, the culinary team has curated a new menu filled with light, flavorful Mediterranean dishes, reflecting the rich culinary traditions of Italy, France, Spain, and Greece. Signature ingredients like olive oil, lemon, fresh vegetables, and herbs will play a central role in these new offerings.

Michael Stendebach, the cruise line’s Vice President of Food, Beverage, and Rooms Divisions, noted that the new concept aims to expand the choices available to guests, incorporating both new dishes and enduring favorites from the restaurant’s original menu. Dining at Rudi’s Sel de Mer will require a supplemental charge of $55 per person, though it will be included for those who opt for the Have It All premium cruise package.
