HAL Introduces New Mediterranean Bistro Concept at Rudi’s Sel de Mer
HAL-Holland America Line is set to enhance its culinary offerings by introducing a Mediterranean bistro concept at Rudi’s Sel de Mer aboard the ms Rotterdam, ms Nieuw Statendam, and ms Koningsdam. This refreshed dining experience will launch in January and February 2025 and will feature a variety of casual yet refined dishes inspired by the coastal cuisines of Italy, France, Spain, and Greece.
Under the leadership of Chef Rudi Sodamin, the new menu focuses on vibrant flavors emphasizing traditional Mediterranean ingredients like olive oil, lemon, fresh vegetables, and herbs. The atmosphere of the restaurant will also shift towards a more relaxed bistro ambiance with updated table settings that enrich the coastal dining experience.
Michael Stendebach, HAL’s Vice President of Food, Beverage, and Rooms Divisions, noted that this new bistro concept allows the cruise line to expand the menu at Rudi’s Sel de Mer, incorporating a wider selection of Mediterranean dishes alongside popular existing items. Dining at Rudi’s Sel de Mer will be available for a supplemental charge of $55 per person, with the option included for guests who choose HAL’s "Have It All" premium package.
