Fred. Olsen Unveils Plans for Mediterranean-Inspired “Fresco” Dining Venue on Borealis

Fred. Olsen Cruise Lines is set to introduce a new open-air dining venue called Fresco aboard the Borealis this November as part of a series of enhancements following the ship’s dry dock. Located on Deck 8, this Mediterranean-inspired dining area will offer light bites during the day and transform into a relaxed lounge in the evenings, providing a unique dining experience at sea.

Fresco will serve cooked-to-order meals that showcase flavors from the Mediterranean coast, allowing guests to indulge beneath the stars. Looking to the future, Fred. Olsen plans significant upgrades across its fleet, including a revamped specialty restaurant, Colours & Tastes, starting in 2026. The menu will feature rotating culinary themes, such as Gourmet Grill and Traditional Italian, while still offering beloved Asian-fusion options. Additionally, a new Chef’s Table experience will be rolled out, providing a curated multi-course dining option accompanied by premium wine pairings, all delivered in an intimate setting.

Doug Glenwright, the Director of Guest Experience, expressed enthusiasm about Fresco’s launch, claiming it will elevate dining options for guests. The upcoming changes to Colours & Tastes and the Chef’s Table are expected to enhance the onboard culinary experience further, ensuring that time spent at sea is memorable.

Fred. Olsen’s fleet includes three smaller ships—Bolette, Borealis, and Balmoral—each accommodating a maximum of 1,400 guests, enabling a focus on intimate dining and leisure opportunities throughout the vessels. With the addition of Fresco and the culinary enhancements planned for 2026, Fred. Olsen aims to bolster its reputation for providing refined, food-centric cruising in a traditionally relaxed atmosphere.
