Oceania Cruises Unveils 12 New Nikkei Dishes at Red Ginger Restaurant

Oceania Cruises has introduced an exciting new menu featuring twelve Nikkei dishes at its renowned Pan-Asian restaurant, Red Ginger. This initiative blends the rich flavors of Peruvian cuisine with Japanese culinary techniques, resulting from the cultural fusion established by Japanese immigrants in Peru during the late 19th century.

Nikkei cuisine emphasizes fresh seafood, vibrant citrus, and bold spices, making it a versatile and celebratory culinary form. The new offerings first appeared on the Oceania Vista and will soon be available on Oceania Allura, with plans for a fleetwide rollout by early 2026.

Chef Gustavo Sugay, with over 20 years of experience in Nikkei cooking, leads the culinary development for this menu. Among the highlighted dishes is Ceviche Nikkei, which features tuna prepared with traditional leche de tigre, cilantro, sesame oil, and red chili. Another standout is the Peruvian-Style Beef Short Rib served with lomo saltado sauce and miso sweet-potato mousseline, showcasing a blend of rich and umami flavors.

Other innovative creations include a rice casserole topped with miso-glazed scallops, soft-shell crab bao buns with Nikkei zarza, and a unique yuzu cheesecake adorned with mango, passion fruit, and basil.

Oceania’s Chief Luxury Officer stated that these Nikkei dishes exemplify the brand’s commitment to providing "The Finest Cuisine at Sea." The Executive Culinary Director noted the menu’s inspiration from the dynamic interplay of diverse culinary traditions, catering to guests’ sophisticated palates and curiosity.
